No-Cook Muesli Bars

For ages I practised trying to make muesli bars.  Finally I have come up with my best version.  This one does not have to be baked.  The butter is the setting agent.  Consequently it needs to be kept in the refrigerator.

Only ever use butter for this recipe as margarine is too soft and it won't hold the ingredients together.

 

Muesli Bar Slice recipe. Easy to make and very nutritious.

Ingredients:

3 cups rice bubbles or similar
1/2 cup coconut
1/4 cup sunflower seeds
1/4 cup sesame seeds
1/4 cup nuts, chopped
1/4 cup dried apricots
125 gm butter, not margarine
4 tablespoons honey
4 tablespoons peanut butter
1/3 cup brown sugar

Method:

Place first 6 ingredients in a large bowl and stir well.

In a small saucepan put butter, honey, peanut butter and sugar.  Melt together.  Bring to the boil, reduce heat and simmer for 5 minutes. 

Add hot mixture to dry mixture and mix well.  Press mixture into a greased slice tin measuring about 18 cm x 28cm (7' x 11") in size.  When cold cut the slice into bars and store in the refrigerator.

Notes:

This is a recipe where you can make changes as necessary but still keep the over-all dry measurements to 4 and 1/2 cups full.

Using a few choc chips is great too but you will need to allow the combined mixture to cool quite a bit before adding them or they will melt.

Only ever use butter for this recipe as margarine is too soft and it won't hold the ingredients together.
