Easy salad and vegetable recipes

We enjoy salads all year round. We use a wide range of ingredients, trying to incorporate seasonal produce into the salad as much as possible. A lovely crispy, crunchy salad can be eaten as a meal in itself or eaten as a side dish with the main meal. Salads are very high in anti oxidants and therefore are extremely good for us if we value our health and longevity. Anti oxidants are thought to be effective in helping to prevent cancer, heart disease, and stroke.

Not just lettuce and tomato!

In our salads we use edible flowers, nuts, beans, seeds and fruit. We try to make the salads as colourful as possible and this is not difficult with the bright colours of most salad ingredients.

One thing we all have to be careful of, though, is that we don't overload our salads with dressings and mayonnaises. These can be sometimes be very unhealthy and we can end up defeating the purpose of having a salad. Enjoy these and then go on to create your own healthy salads:
