Sweet Balsamic Dressing
This dark brown dressing was served with a salad I had at a local restaurant here in Bunbury. I asked the waitress for the recipe. She said she gets asked for it so many times as it is very popular there. There are only two ingredients. Make heaps as it lasts well in the refrigerator. This dressing is also great served with hot food such as fish and vegetables.
Preparation time: 2 minutes
Cooking time: 40 minutes
Quantity: 300 ml

100 gm brown sugar
500 ml balsamic vinegar
Place both ingredients in a saucepan and boil down until you have only 300 ml left in the pan. Cool and bottle. Store in the refrigerator.
To make larger quantities just remember the 1:5 ration so for one part sugar you need five parts vinegar. I've even done this recipe in the microwave using a glass jug with measurements on the side. It is then very easy to see when it is reduced down to 300 ml.
