
Spring Onion Sauce
This quick and easy sauce recipe is excellent with meat or fish dishes. It's quite delicate in flavour.

Ingredients
5 spring onions, trimmed and sliced finely
2 teaspoons butter
1 and 1/2 cups skimmed milk
1 and 1/2 teaspoons stock powder
Salt and pepper to taste
2 rounded tablespoons corn flour
1/2 cup milk extra
Method:
In a small saucepan gently cook the spring onions in the butter for 5 minutes.
Add the skimmed milk, stock powder, salt and pepper. Heat gently until almost boiling.
In a small bowl mix the corn flour with the extra milk until all lumps are gone. Stir this mixture into the hot milk mixture stirring continuously. Mixture will thicken so continuous stirring is essential. Cook for 3 minutes.
This low fat Spring Onion Sauce will serve 4.
