This recipe only ever gets
made at Christmas time in our place. There is nothing healthy about it
but boy does it taste great. You can change and amend the
ingredients but keep the overall quantity of dry ingredients the
same. Some people put dried fruit in their Rocky Road.
Others use preserved ginger or even small pieces of shortbread
biscuits. It's a personal choice but the ingredients below
are what we like using.

Ingredients:
375 gm block of milk chocolate, broken into
cubes
75 gm copha
100 gm mini marshmallows
2/3 cup coconut flakes
1/2 cup rice bubbles
1/2 cup roasted, unsalted peanuts, chopped roughly
1/3 cup glace cherries, chopped roughly
Method:
Place the chocolate and copha in a large
glass bowl and microwave at 50% power for 5 - 6 minutes, stirring
every minute until the two ingredients are just smooth and
combined.
Whilst the ingredients are melting in the
microwave, mix the other ingredients together in a large bowl.
Add the dry ingredients to the wet
ingredients and pour into a greased, paper lined slice tin.
Refrigerate for an hour.
When cold cut into small pieces.
Makes about 40 pieces
Notes:
You can use dark
chocolate if you like or a combination of both chocolates.
If you haven't got mini marshmallows the bigger variety will
do. Just chop them up with kitchen scissors.
