These are lovely and easy to make and are a favourite in my husband's lunch box

2 cups SR Flour
75 gm margarine
1/3 cup sugar
1/3 cup sultanas
1/4 cup chopped glace cherries
3/4 teaspoon cinnamon
1 egg, beaten
1/3 cup milk
Extra sugar for sprinkling
Pre-heat oven to 180 degrees Celsius.
Rub the margarine into the flour, add sugar, sultanas, cherries and cinnamon. Mix through well.
Add the egg and milk and stir until well combined.
Place 12 mounds of mixture on a baking paper lined tray. Sprinkle lightly with sugar.
Cook for about 12 - 15 minutes until golden brown.
I always hate rubbing marg into flour so I place both the ingredients into my food processor and I allow it to do the job for me. After this stage the mixture needs to be tipped out of the processor and the rest of the method needs to be done by hand. The mixture will spread slightly so ensure the mounds are high to start with.
