
Peanut Butter Crunch Biscuits
These biscuits stay fresh and crunchy for ages in a sealed container. The extra sugar they are dipped in gives them more crispness

Ingredients:
1/2 cup caster sugar
1/2 cup brown sugar
125 gm butter or margarine
1/2 cup smooth peanut butter
1 egg
2 tablespoons milk
1 teaspoon vanilla
2 and a half cups self raising flour
1/2 teaspoon salt (optional)
1/4 cup granulated sugar extra
Method:
Pre heat oven to 180 degrees Celsius.
Blend first four ingredients together in a bowl.
Add egg, milk and vanilla. Mix.
Add flour and salt, mixing till well combined.
Shape into balls the size of a walnut, roll in the extra sugar and place them on a baking tray lined with baking paper. Flatten the biscuits slightly with the flat underside of your fingers.
Bake at 180 degrees for 15 - 20 minutes. Makes 40 good sized biscuits
Notes:
These biscuits will spread a little during cooking so leave space on the tray for expansions.
