Healthy Tropical Chicken Burgers

My family love hamburgers but I don't really like the fat content of most burgers.  This recipe is not only healthy but very tasty too.

The links immediately below are not my recipes but you may find them interesting anyway.

Method:

Combine mince, garlic, ground chilies, cumin, coriander, salt and pepper together.  Divide mixture into 6 portions, shape into flat burgers, coat in flour  and cook in non-stick pan with minimal oil till golden and cooked on both sides.

Meanwhile mash avocado with lime juice and set aside.

When burgers are cooked remove them from the pan and keep warm.

Add pineapple rings to the pan and cook briefly on both sides till heated through and browning slightly.

Cut buns, spread with avocado mixture, place burger inside, top with sliced pineapple, salad and chili sauce

Food Facts:

Pineapples contain bromelain which is an anti bacterial enzyme that has anti inflammatory properties so it may be useful for arthritis suffers. The pineapple is a native of Brazil and neighboring Paraguay and has been cultivated for thousands of years.  Pineapples can weigh up to 20 pounds.  More than one-third of the world's commercial supply of pineapples comes from Hawaii.
