Healthy Tropical Chicken Burgers
 

My family love hamburgers but I don't really like the fat content of most burgers.  This recipe is not only healthy but very tasty too.

Ingredients:

6 large hamburger buns
600 gm chicken mince
2 teaspoons chopped garlic
tiny shake ground chilies
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon salt
Good shake of pepper
1/2 cup of flour to coat burgers (approximately)
Smidge of oil to cook burgers
1 large avocado
1 teaspoon lime juice
6 rings of tinned pineapple (sugar free variety)
Salad of choice
Sweet mild sweet chili sauce

 

Method:

Combine mince, garlic, ground chilies, cumin, coriander, salt and pepper together.  Divide mixture into 6 portions, shape into flat burgers, coat in flour  and cook in non-stick pan with minimal oil till golden and cooked on both sides. 

Meanwhile mash avocado with lime juice and set aside.

When burgers are cooked remove them from the pan and keep warm.

Add pineapple rings to the pan and cook briefly on both sides till heated through and browning slightly.

Cut buns, spread with avocado mixture, place burger inside, top with sliced pineapple, salad and chili sauce
