Avocados would most likely be voted the most favourite food in our household. You could really regard them as "fast food". Simply cut them open, sprinkle with salt and pepper and you have an instant snack. In fact that is really faster than "fast food" isn't it! When avocados are in abundance we eat them for breakfast spread on hot toast - no butter is needed. This recipe is very easy to make. Team it with some healthy style corn chips (not the ones with lots of fat and seasoning) and you have a snack to die for

1 large avocado
1/2 small red onion, diced very finely
1/2 tablespoon mayonnaise
1/2 teaspoon lemon juice
Salt and pepper to taste
Cut avocado, remove stone, place flesh in a bowl and mash well with a fork. Add other ingredients
and mix well. Place plastic wrap over surface area until ready to use.
Serve with corn chips, savoury biscuits or vegetables to dip in it.
If you only have regular onions then use those.
Avocado flesh turns brown when it stays in contact with air so ensure the Guacamole is covered by wrap and eat promptly.
Avocados provide more than 25 essential nutrients, including fibre, potassium, Vitamin E, B-vitamins folic acid and lutein. The phyto chemicals they contain are naturally occurring chemical compounds found in foods that may prevent disease and preserve good health. Vit. E is a powerful anti oxidant that is known to fight cancer, to slow aging and to protect against heart disease . Lutein is believed to protect against prostate cancer and eye disease such as cataracts and macular degeneration. Avocados contain 60% more potassium than bananas contain. They are high in fat but they contain mono unsaturated fats which are good for the heart. Because they are high in fat they contain more calories than other fruits and vegetables do. One avocado contains about 300 calories. Avocados are native to central America and it is believed the Aztecs regarded them as a sexual stimulant.
