Cocktail Frankfurt Sausages With Beans
 

Cocktail Franks were on a good special in our Coles supermarket recently so of course I had to buy up big.  Now what shall I do with them??

I was feeling the need for a "comfort food" meal so this was the end result.  Very nice - everyone agreed.  Even my two teenagers, who don't usually like sweet potato, agreed it was pretty good.

Ingredients:

2 onions, sliced
spray oil
600 gm (1.5 lbs) diced potatoes
200 gm (8 oz) diced sweet potatoes
100 gm (4 oz) sliced green beans
1/2 teaspoon dried tarragon
shake of chilli powder
1 tin condensed tomato soup
1 teaspoon lemon juice
Extra water
Salt & pepper to taste

500 gm cocktail Frankfurts, warmed though

Method:

In a large saucepan cook the onions in the spray oil on medium heat until onions are turning a golden colour.  You will need to stir the onion often.

Add both types of potatoes, and the green beans.  Cook gently with the lid on the saucepan until the potatoes are almost cooked.  You may have to add a smidge of water here and there to prevent the vegetables sticking to the bottom of the pan.

Add the remainder of the ingredients and gently bring it all back to the boil.  Stir very carefully as it is re-heating because you don't want to break up the potatoes. Add more water if necessary to give a nice gravy consistency.

Serves 4.

Notes:

This is one of those recipes where other vegetables can be substituted.  Carrots would work very well but may need a slightly longer cooking time than potatoes.  Red and green capsicums would also be great (and colourful).
