Ingredients:2 onions, sliced Method:In a large saucepan cook the onions in the spray oil on medium heat until onions are turning a golden colour. You will need to stir the onion often. Add both types of potatoes, and the green beans. Cook gently with the lid on the saucepan until the potatoes are almost cooked. You may have to add a smidge of water here and there to prevent the vegetables sticking to the bottom of the pan. Add the remainder of the ingredients and gently bring it all back to the boil. Stir very carefully as it is re-heating because you don't want to break up the potatoes. Add more water if necessary to give a nice gravy consistency. Serves 4. Notes:This is one of those recipes where other vegetables can be substituted. Carrots would work very well but may need a slightly longer cooking time than potatoes.
