Caramelised Apple And Strawberry Crunch
 

I don't know which part of this recipe I like best - the base or the topping.  It has almonds and strawberries in it which aren't particularly cheap ingredients but I think this is something special to serve when visitors come over.

If your strawberries are quite small then leave them whole.  Very big strawberries should be cut into four pieces.

The fruit and the topping can all be made well before the visitors arrive.  Keep them separate and then at the last minute tip the topping onto the fruit and then slide it into the oven.

Ingredients:

50 gm  (2 ounces) butter or margarine
1/4 cup brown sugar
1 tablespoon lemon juice
8 apples
1 punnet strawberries
1 and 1/4 cups of plain flour
1/2 cup ground almonds
1 teaspoon baking powder
100 gm (3 ounces) butter or margarine
1/2 cup brown sugar
1/2 cup flaked almonds

Method:

Heat oven to 180 degrees Celsius.

Place butter, 1/4 cup of sugar and lemon juice in a pan and heat gently until sugar is melted.

Peel, core and quarter the apples.  Cut each quarter cross-wise into four pieces.  Add apple to pan and cook gently until apples are just barely tender.  Add strawberries and very gently cook for 5 minutes.

Tip fruit mixture into an oven-proof dish.

Place flour, ground almonds and baking powder into a bowl.  Mix around a little to distribute the baking powder evenly.  Rub in the butter until mixture resembles fine bread crumbs.  Add sugar and flaked almonds to this mixture and combine well.

Tip this crumbly mixture onto the fruit but don't compact it and cook at 180 degrees for 25 minutes till golden on top.

Serves 6

Notes:

I use whatever eating apples are in the pantry.  You don't have to use green cooking apples. 

Serve with icecream, custard or whipped cream.  Personally I make custard using skimmed milk then it is more healthy.

Apples cleanse and purify the blood and the liver.  They are a good source of vitamin C and fibre.  Remember your Gran's old saying "An apple a day keeps the doctor away".  Well it's pretty good advice.  Remember to eat the skin if you want to maximize the fibre.  Eating an apple decreases the chances of tooth cavities by cleaning the teeth and massaging the gums.
