
Cheap Biscuits - Butterscotch Melters
These little biscuits just melt in your mouth. They are great for lunch boxes too.

Ingredients:
Spray oil to grease the baking tray
150 gm soft butter
1/2 cup brown sugar
2 tablespoons golden syrup
1 cup self raising flour
1/4 cup custard powder
1/4 cup sunflower seeds
1/2 cup choc bits
Method:
Heat oven to 180 degrees Celsius.
Beat all ingredients in a mixing bowl till light and creamy.
Place walnut sized blobs of mixture onto a greased paper-lined tray allowing room for the biscuits to spread. Gently flatten each blob with the back of your fingers. I find it works best to keep wetting the backs of my fingers so the mixture doesn't stick to them.
Bake for 10 - 12 minutes on 180 degrees Celsius (350 degrees Fahrenheit) or until golden in colour. Cool on a wire rack.
Makes 40 biscuits.
Notes:
If you don't have choc bits or sunflower seeds then just make the biscuits without them. They will still taste wonderful.
Alternatively you can omit the choc bits and sunflower seeds and instead use half a glace cherry gently pushed into the top of each biscuit before cooking.
