Borscht Soup - Russian Beetroot Soup

 

We first came across Borscht soup when we travelled across Russia. We instantly loved it. This recipe seems to be the closest I can get to the soup served at a hotel we stayed in at Vladivostok.

Ingredients:

1 and 1/2 litres chicken or beef stock
3 good size beetroots
2 large carrots
2 large onions
1 x 400 gm tin chopped tomatoes
300 gm finely chopped cabbage (about 1/4 of a small cabbage)
2 tablespoons chopped fresh dill
1/2 teaspoon salt
Pepper to taste

 

Method:

Place the stock in a large saucepan.

Peel the beetroot, carrots and onions and chop them all very small. Add to the saucepan.

Bring the pan to a boil and cook for half an hour. Add the tomatoes and cabbage and cook for a further half hour.

Add the dill, season with the salt and pepper and serve.

 

Notes:

If I have red onions and red cabbage on hand I use them instead of the standard white varieties. But ordinary cabbage and onions will do just as well. If you don't have fresh dill used the dried variety.

 

Food Facts:

Cabbage is regarded as a "wonder" vegetable because it has so many good qualities. Raw and juiced cabbage has anti-viral and ant-bacterial properties. It is considered to speed up the metabolism of oestrogen in women and this may protect against cancer of the breast and womb. Studies have shown that men can reduce their likelihood of getting colon cancer by two-thirds if they eat cabbage more than once a week.

Onions are high in energy and have good amounts of B6, B1, and Folic acid in them. They contain chemicals which fight free radicals in our bodies. Free radicals cause disease and destruction in our cells. Onions have anti-viral, anti-fungal and anti-bacterial properties in them. These properties are most potent when the onion is eaten raw. Onions raise the levels of beneficial HDL cholesterol and they lower the levels of the bad LDL cholesterol.

Beetroot is regarded as a general tonic. It can help with blood disorders, particularly anaemia. It has a high fibre content so is good for those suffering constipation. Beetroot contains calcium, iron and vitamins A and C. I'm now reading that beetroot is excellent at reducing blood pressure.
