Cheap Recipe For Tofu Bean Curd Burgers
 

Bean curd (Tofu) is so healthy.  It is rich in protein and used by Chinese and Japanese in their soups. Even people who say they don't eat tofu will enjoy this recipe.  Tofu is much cheaper than buying meat.

Ingredients:

4 tablespoons oil
1/2 onion, finely chopped
1 small green capsicum, finely chopped
1 medium carrot, grated
350 gm (12 ounces) bean curd (tofu)
2 tablespoons wholemeal flour
1 egg. beaten
100 gm (4 ounces) grated tasty cheese
Salt and pepper
Flour for dusting

Method:

Heat half the oil in a fry pan, add onions, green capsicum and carrot.  Cook until onion is soft.  Mash bean curd and add to fried vegetables. Add wholemeal flour, egg, cheese, salt and pepper.  with wet hands shape into about 12 burger shapes.  Dust in the extra flour and fry in the remaining oil until golden.

Serves 6.

Notes:

These burgers are excellent in bread rolls filled with salad.
