Banana And Passionfruit Pastries
 

These Banana and Passionfruit Pastries are dead easy to make and take about 10 minutes to cook in the oven.  They are decorative and light to eat so they would be suitable to serve after a heavy main course.

Ingredients

1 sheet frozen puff pastry
3 teaspoons icing sugar
100 gm lite creamed cheese (Philadelphia)
1 large banana, sliced
1 passionfruit
 

Method:

Defrost pastry.  Pre heat oven to 220 degrees Celsius. Line a baking tray with cooking paper.

Cut the pastry into four equal squares.  With a sharp pointed knife score lines 1.5 cms (about 5/8 inch) in from the edge to make an inner square.  DO NOT CUT RIGHT THROUGH THE PASTRY.

Mix softened cream cheese with the icing sugar.  Divide mixture into four equal portions and carefully spoon the mixture into the centre of the pastry squares.  Smooth out the cheese mixture but keep it within the score lines.

Place 1/4 of the banana slices neatly on top of the cheese mixture leaving an indentation in the middle. Repeat with other three squares.  Place a large teaspoon of passionfruit in the centre of the banana slices.

Cook on paper lined baking trays for approximately 10 minutes until the pastry is golden brown. 

Serves 4
 

Notes:

Oven timing is crucial in this recipe as the oven is hot and the pastry can easily get too brown.
