Sugar Free Apple and Cinnamon Muffins
 

I'm always trying to find cures for my sinus problems so for a while in my life I was not permitting myself to eat anything with sugar in it.  The naturopath I was dealing with at the time said that fructose was acceptable in lieu of normal sugar (sucrose).  Fructose is a fruit sugar that apparently doesn't have the bad effects that normal sugar has.  This muffin recipe was a creation from that era in my life. 

Verdict - muffins were great but sinus problem still exists.

Ingredients:

1 and 3/4 cups white self raising flour
1/2 cup wholemeal self raising flour
2 teaspoons cinnamon
2/3 cup fructose
2 eggs
1 cup skimmed milk
1/2 cup oil
2 Granny Smith apples, diced small

Method:

Heat oven to 180 degrees Celsius.

Sift the flours and cinnamon together in a large bowl.  Add the fructose.  In a separate bowl beat together the eggs, skimmed milk, and oil.  Add the wet ingredients to the dry ingredients and beat slowly with electric food mixer.  Gently stir in the apple with a metal spoon.

Cook in greased muffin tins at 180 degrees Celsius (350 degrees Fahrenheit) for 20 - 25 minutes till golden and firm.

My muffin tins are quite large and this mixture makes me 16 muffins.

Notes:

Fructose is easily available at health shops and larger supermarkets.  It is more expensive than normal sugar.

Granny Smith apples are large green cooking apples.

Food Facts:

A medium apple has about 80 calories. 25% of an apple's volume is air - that is why they float. Apples cleanse and purify the blood and the liver.  They are a good source of vitamin C and fibre.  Remember your Gran's old saying "An apple a day keeps the doctor away".  Well it's pretty good advice.  Remember to eat the skin if you want to maximize the fibre.  Eating an apple decreases the chances of tooth cavities by cleaning the teeth and massaging the gums.
