Apple And Cherry
Slice
This is another one of those recipes where you would most
likely have all the ingredients in the pantry.
If you
don't happen to have sliced almonds in the cupboard then
omit them. The recipes will still be fine.
By the way, it doesn't matter what type of apple you use.

Ingredients:
2 apples cored and diced
3/4 cup sugar
1/2 cup coconut
1/2 cup sliced almonds
1/4 cup glace cherries, chopped
125 gm butter, melted
1 egg
1 and 1/2 cups plain flour
1 teaspoon bi carbonate of soda
Method:
Heat oven to 180 degrees Celsius.
Mix first five ingredients together in a bowl. Add
the melted butter and stir well. Add remainder of
ingredients and stir again.
Pour into greased slice tin measuring about 18 cm x 28
cm (7' x 11"). Cook at 180 degrees Celsius (350
degrees Fahrenheit) for 25 - 30 minutes. Put aside
till cool and then cut into squares.
If liked, you can ice the cake with the following
ingredients mixed well together:
1 and 1/4 cups sifted icing mixture
2 teaspoons butter
Few teaspoonfuls of water
The quantity of icing above is
sufficient to cover the whole slice. Sometimes I only
make about one quarter of the icing quantity and then I
simply drizzle it over the slice, as in the photograph.
Serves about 15
Notes:
When you cook this slice for the first time you will
think the mixture looks way too thick and sticky but that is
perfectly fine. The moisture out of the apples seems to work
its magic and the slice ends up being very moist.
You can peel the apples if preferred but
I leave the skin on to retain more fibre.
I actually do sift the icing mixture in this recipe,
otherwise the icing can be a little lumpy. Then you
end up wasting more time trying to squish down the lumps.
